Workout Wednesdays


I hope everyone is having a fabulous week.  Of course we are busy, busy, busy...like we don't ever see each other.  Yesterday we basically spent the day running errands (grocery store, getting Adam's truck inspected and oil changed...) but at least we were together.  We also had a great workout at the gym.  I am so proud of my husband!!  He has lost about 18 pounds this month and has worked so hard.  He has stuck to eating healthy and working out every week.  We were the only ones in the gym so we had to take a gym selfie!


On Monday we had our cheat meal at Bad Daddy Burger, which has like the best burger and fries in Winston Salem.  Adam has been craving a burger so I sacrificed my pizza cheat meal so we could have burgers.  It's been a while since I have had the Bacon Cheeseburger On Steroids and I didn't really miss it.  I had to work later that day and the rest of the afternoon I felt like complete crap.  I couldn't think straight and I felt exhausted and tired.  It was a wake up call that these types of foods are definitely not good for the body.  I love eating healthy and nourish my body with healthy fuel.

Southwestern Stuffed Spaghetti Squash


So I haven't posted a recipe in a while, because Adam and I basically eat the same things every week.  I decided to change things up.  I made a Southwestern Stuffed Spaghetti Squash.  Recipe to follow:


INGREDIENTS:

1 medium spaghetti squash
1 tablespoon olive oil
1/2 onion, chopped
2 garlic cloves, minced
1 jalapeno pepper, minced (leave seeds for more heat)
1 red bell pepper, chopped
1/2 tablespoon oregano
1.2 tablespoon chili powder
salt and pepper to taste
1 (15 oz) can black beans, drained and rinsed
1 cup frozen corn, thawed (I used fresh roasted corn)
1/2 cup freshly torn cilantro, plus more for garnish
lime juice
1 cup of grated cheddar cheese

DIRECTIONS:

Preheat oven to 375 degrees.  Place whole squash on a baking sheet and roast for 50 minutes,  Let cool for another 30 minutes, then cut in half.  Spoon out the seeds and discard, then scrape up the spaghetti squash flesh with a fork, creating the "spaghetti"

In a large skillet, heat oil over medium-high.  Add onion, garlic, jalapeno and red bell pepper,  Saute 2 minutes,  Stir in cumin, oregano, chili powder, and a good pinch of salt and pepper.  Saute 1 more minute.  Stir in beans, corn, half of cilantro and lime juice until well combines.  Add the "spaghetti" from each squash to the vegetable mixture and stir to combine.  Taste and season to desired.  

Set oven to broil.  Stuff each squash half with the squash-vegetable mixture and top with grated cheddar.  Broil until cheese melts and gets brown and bubbly, 1-2 minutes.  Sprinkle with remaining cilantro and serve warm. 

You can add grilled chicken or ground turkey if you want to meat but it was pretty good without meat!.

What I'm Loving About This Week


It's been a fun but busy week.  Monday we had an AMAZING dinner and drinks date with an awesome couple.  It felt so good to have a nice quiet dinner without distractions aka cell phones, with some great friends.  Can I say how thankful I am that I have this chick in my life.  Not only is she fun but she my motivating (female) partner in the journey to getting fit and healthy (Adam is my number one partner).
 
 

Tuesday morning (very early for all of us evening/night shifters) we headed up to Hanging Rock to hike.  The last time I went hiking was June of 2012, 3 months after we got married.  I definitely was not in very good shape and had a hard time hiking.  Basically I was miserable.  I was a little miserable this time because it was like 10 million degrees outside.  I still got a little winded but was able to keep up.  I give props to my girl Sarah for keeping up with me because I know it was hard to do.  I was in that same place 2 years ago but the next time we go hiking we will run up that mountain!


We made it to the top!!  I can't wait to see what other adventures we will have with this fun couple!  Police families have to stick together!!  


It is so crazy to see how much can change in 2 years.  We are happier and healthier now then in our first year of marriage.  Also we did not plan to match, we just think the same...a lot.

Dirty Thursday and TGIF


Dirty Thursday!!  I had a pretty good workout at the gym.  Started to run a little faster these days.  


Stopped and got the Health Nut smoothie before going to see Trainwreck with my girl pal Sarah.  Our boy toys were working tonight.  BTW how cute is the smiley face on my cup.  This is why I love Tropical Smoothie Cafe!


TGIF...Tonight is night 5 of 5 for my hubs and I actually got to see him for than 5 minutes and it was pretty awesome.  I was starting to feel like before I was married and living at home because I see my parents more than I see my husband.  


Friday night was always Pizza and Ice Cream night for us.  Considering regular pizza is ice cream is both fattening and high carb and sugar.  So tonight I made Cauliflower Crust with spinach and pepperonis with a little cheese.  


Today I found this Arctic Zero ice cream at Lowes Grocery Store.  I've seen lots of people in the Instagram world say this stuff is pretty good!!  It's not as creamy as real ice cream but it's not bad.  Considering it is gluten free, fat free, lactose free, GMO free and low calorie...it's edible and I would buy it again.

Work it Girl Wednesday


This week has been busy so far but so many exciting things!  I received an Advocare shipment yesterday and I'm pretty excited about it.  Some of it was for a coworker, but most of it were ours.  The Watermelon Spark and Catalyst is mine of course and the Orange Spark is Adams.  I am in LOVE with the new SLAM flavors, it really gives me a boost at the gym to get some hardcore cardio in  (especially on lack of sleep). 


More exciting news...The hubs took a gym selfie!!!  BTW...how amazing does he look??  I am sooooo proud of all his hard work and dedication to get fit and healthy with me!!  #MyHero #HottieHubby #MyHubbyIsBetterThanYours


It's been a while since I've posted a gym selfie on the blog.  I'm slowly seeing progress.  Lately I have been doing lots of weightlifting to tone my arms and I am really starting to see definition!!   


It's not just Wednesday, it's #WCW (woman crush wednesday) and look who is on the cover of Cosmo this month.  SJP who is AMAZING!!!  She is my WCW this week.  I think she is GORGEOUS!!  I would kill for her hair and lips.  She will always be Carrie Bradshaw!!  #SJP #SexandtheCity #ShoppingIsMyCardio #ShoeLove

Happy Friday...

Life has been crazy busy post the Austin vacation.  We hosted a cookout for Adam's squad (his boys) and their spouses.  We had a great time eating and spending time with each other.

The next day I went back to work and worked 12 hour shifts the next 6 days.  All I did was work, go to the gym, shower, and sleep for 6 days!  


My last night of work I got 20,000 steps and then still went to the gym after work!!  You gotta work hard if you want to see results!!  #TrustTheProcess 

So yesterday Adam and I went to Boone for the day.  My hairdresser moved to Boone, so yes I drove an hour and a half away to get my hair done.  She does a fabulous job at what she does.  She put red in my hair this time and I absolutely LOVE it!!  This makes me ready for fall already!
This is probably my favorite color Lindsay has done on my hair EVER!!  I feel sassy and amazing!

We had lunch at the Coyote Kitchen, which was AMAZING!!  It is a cross between Mexican and Caribbean style food.  I had the Phoenix bowl, which had blackened chicken, coconut rice, black beans, spinach, red peppers, corn, zucchini, and squash.  It had too many black beans in it but other than that it was fabulous.    


Adam is not feeling too well today so I'm off to help him feel better.  Chicken noodle soup, popsicles, Spark, oranges, lots of water, and Vitamin C!

I'm Back...



It seems like months since I've blogged.  We went on vacation June 24th-July 1st to God's Country aka TEXAS!!!!  We had a blast.  Ate lots of GOOD (unhealthy) food.  We came home and celebrated America's Birthday and then jumped back into the work and workout routine.  I just finished working three 12 hour shifts so finally I was able to update everyone on our trip.

So we spent half our trip in Austin and the other half with the BEST woman EVER in Maypearl.  We had a FANTASTIC time and definitely didn't want to come home.


 We definitely looked like a couple of tourists with my big Nikon camera and riding around in this micro-machine (that's what Adam called it).  Here are a few pictures of us together:


Traveling from Austin to Maypearl was one of my favorite parts of the trip because we got to drive through some cool towns and some creepy ones.  We spotted some of the film locations for the Texas Chainsaw Massacre and it was creepy.    


This picture was taken on Lake Travis in Austin and it was one of the most beautiful places I have EVER been.  It was another one of my favorite parts of the whole trip.  I couldn't post a blog without pictures of food, so here is my food porn from Austin, Texas:

 I am hoping for a trip back to Austin soon.  Adam is planning on applying to their police department, so I am excited/nervous to see what the future holds.  We both really fell in love with ATX.
